Everyone likes salsa, right. It’s the new Ketchup. People put it on everything. It obviously goes great with chips, but it is magical on eggs and I even put it on baked potatoes, since I shouldn’t have butter and cheese etc.
I have been making my own for years and now that I have a food processor, I make it all the time. Those tomatoes, onions and jalapenos pack a nutritional wallop. You can make it hot, but if you like mild, just remove the seeds and veins from the jalapenos. This recipe is so easy, you can make it in 3 minutes with a food processor.
Ingredients:
- 6 roma tomatoes
- 1 medium onion
- 1-3 jalapenos (depending hot hot you want it)
- 2 tbsp. chili powder
- 1 small can of tomato juice
- salt to taste
Procedure:
I make this salsa in two batches since I have a small food processor. I put one whole tomato, a stemmed jalapeno and half of a medium onion in the processor.pulse just long enough to chop all of the contents. Add the tomato juice, chili powder and salt. Stir and eat it all up.
I really hope that you try this. It’s so easy, healthy and inexpensive, about 25% of the cost of those vinegary tasting jars of salsa. Let me know how much yhou love it.
