Carrie, my wife, also known as More Love Mama, loves green chile stew as much as I do, but she prefers to add potatoes, corn, pinto beans and broth to the recipe and to eat it as a true stew. The really cool thing about making this green chile stew is that it starts out exactly the same as Daddy’s Favorite Green Chile Stew. We make enough of Daddy’s Favorite so that we can eat it on one night and then have Mama’s favorite a few nights later.
Ingredients
This recipe requires you to first make Daddy’s Favorite Green Chile Stew. You will add the following ingredients to make it into Mama’s Favorite Green Chile Stew.
- Set aside 1/2 of your Daddy’s Favorite Green Chile Stew
- One Bag of Simply Potatoes Diced Potatoes
- One bag of Birdseye Steamfresh Super Sweet Corn
- 2 cans of Bush’s Pinto Beans
- 4 cups chicken stock
Procedure
Step 1. Warm Daddy’s Favorite Chile in a large stock pot.
Step 2. Add in the potatoes, pinto beans, corn and 2 cups of chicken stock. (if you want it to be soupier, add more stock)
Step 3. Bring to a boil and simmer for 30 minutes
Serve in a bowl with a side plate of the following condiments:
- Corn or Flour tortillas
- Queso Fresco
- Fresh Sliced Jalapeno
- Diced Onions
- Limes
- Cilantro
- Sour Cream
- Lettuce
- Tomatoes
- Sliced Avocados
What I like most about these two recipes is that they are so easy to make. The second version, Mama’s Favorite Green Chile Stew, is just as easy as making leftovers. Yet they are different enough that the kids don’t realize it. I hope you will try both of these recipes. Let me know which one you like better.
